Double Tomato Bruschetta

Ingredients

6Roma tomatoes, chopped
1/2 cupsun-dried tomatoes, packed in oil
3 clovesminced garlic
1/4 cupolive oil
2 Tbspbalsamic vinegar
1/4 cupfresh basil, stems removed
1/4 tspsalt
1/4 tspground black pepper
1French baguette, (3/4 in slices)
2 cupsshredded mozzarella cheese

Steps

  1. In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.
  2. Toast bread. Divide the tomato mixture evenly over baguette slices. Top slices with mozzarella cheese.
  3. Broil for 5 minutes, or until the cheese is melted.
